Miso-pickled grilled pork loin
Miso is a fermented food that contains the enzyme "protease," which breaks down proteins and has the effect of tenderizing meat. Additionally, by marinating meat in miso, the enzyme helps to retain moisture, keeping the meat from becoming dry and maintaining a juicy texture.
ingredients
pork loin (about 1.5 cm thick) | 400g |
---|---|
miso | 2 tablespoons |
Sake | 1 tablespoon |
Mirin (Japanese sweet cooking wine) | 1 tablespoon |
Sugar: | 1 tablespoons |
Soy sauce | 1 tablespoon |
作り方

①Combine the seasoning ingredients.

②Put the meat and seasoning mixture in a plastic bag and marinate it. (For thin sliced meat for ginger pork, marinate for about 30 minutes. For thick cut meat for tonkatsu, marinate for over a day.).

③Heat oil in a frying pan, add the miso, and fry the meat. Cover and steam until it's done.
